Vinification: After rigorous grape monitoring of the ripening process of low-yield vines of the Estate, the optimum harvesting moment is determined. Cold maceration follows, selection of the free run juice and alcoholic fermentation takes place at low temperatures. The process continues with a short period of maturation in its fine lees, creating an elegant, fresh and impressive wine.
